Food Friday - loaded cauliflower

My mom made this when she was staying at our house.  They have been trying to stay on Paleo since my dad's stroke.

Turns out Paleo isn't so bad.  Not that I want to do it....but this is one of the meals I continue to make.

1 - chop the cauliflower into pieces....just like you would potatoes.

2. -  boil the cauliflower.

3 - when it's nice and squishy drain it and mash away!

4 - next I add the cream cheese and mix it up

5 - then I add some sour cream.

6 - last I add shredded cheese.

7 - almost done....transfer to a dish for the oven.

Ohh....and let your husband add more cheese.  Because according to him there is never enough cheese.

This was the best batch yet!

Working Wednesday- drama center makeover

Community Helpers themed drama center

Before-traditional house themed drama center.  Of course ever popular with the class but sometimes change is good for all of us.

Mailbox made from a paper box.  This is how it all started! I thought a mailbox would be a nice addition to the writing center.  Then in I got a little carried away. Otherwise known as procrastination😜

I started by wrapping the house furniture with paper.

Then when it became clear this plan could possibly work I packed up the house toys.

Goodbye food👋

Goodbye baby dolls👋

Goodbye dishes👋

Hello my little community helpers!

The brown building will be turned into a house on fire.

The Post Office will have supplies and nmw cards.

Dominican Republic part 6

PARTY!

The Bravisimo show!
What I imagine the old Vegas shows were like.

The party moving on to the pool.

And......my morning after breakfast.

Yogurt and toast.

Great Halloween!   Epically for a husband who doesn't like Halloween.

Dominican Republic part 5

Wedensday was beach day!

Lunch at the beach.

A cold drink and my iPod.

What a great view for the day!

Dominican Republic part 4

On Tuesday we went to Ocean World

The sea lion show was great!

After the show we went to see the birds.

Travis had a ball with the birds!

Dominican Republic part 3

On Monday we went on the 1/2 day city tour.

While waiting for the cable car we saw some local musicians.

They even let Travis play a little.

We took the cable car to the top ofMount  Isabella.

Travis does not love heights.

School from the cable car.

Flowers and lizards at the top of Mount Isabella.

Photo in front of the statue.

Next we were able to see cigars being made.

The oldest church in Puerto Plata.

Onward to the rum factory.  They don't allow pictures inside but they have this little photo op set up in front.
There is also a shop at the end of the tour to buy rum and some other suviners.

Next we went to the old fort.  The fort was closed so we weren't abld to go inside.

When we arrived back to room this was waiting for us on the bed.
So nice to come back to a nice clean bed.

We ventured out to the beach before dinner.
